Sweet Fern - Comptonia peregrina - sweetfern is highly aromatic botanical with an opulent floral fragrance, warm sweetness and a slight astringent finish. Great in teas, infusions, cocktail syrups, beers, and is used in some sublime Canadian gin recipes. Sweet fern is a remarkable eastern Canadian native plant that is the last remaining of its genus. While not actually a fern, it gains its name from the lobe like leaf that contains the lovely fragrant oils.
Infused in a simple syrup, sweet fern makes a really delightful addition to fruit salads herbal teas or paired with goat cheese.
